hearty and delicious//banana oat muffins

i am a sucker for a good muffin and even more so a grab and go breakfast.
it is nice to make a batch of home made muffins on the weekend so that the hubby and i have a quick breakfast to grab as we are running out the door during the week.
this week, banana oat muffins.
i try to pick healthier options and definitely something with fruit.
wren also loves muffins, so it is a win-win!
let's go shopping!
-1 1/2 cups cake flour
-1 cup rolled oats
-1/2 cup sugar
-2 tspn baking powder
-1 tspn baking soda
-1/2 tspn salt
-1 egg
-1/2 cup milk
-1/4 cup vanilla almond milk
-1/3 cup olive oil
-1 cup mashed bananas

and get to work!
preheat your oven to 400 degrees

in a medium size bowl, mix together your dry ingredients.
note:  you can use all-purpose flour, but i think cake flour makes for a better muffin:)

in another medium-large size bowl, mix together wet ingredients
note:  instead of using a mix of almond milk and cow's milk, you can use all cow's milk but i prefer adding in the almond milk.  if you go with all cows milk, you may want to add 1/2 teaspoon of vanilla as well.

mash your bananas
note:  1 cup is approximately 4 bananas
add to the wet ingredients

slowly add the dry ingredients into the wet ingredients and mix until well combined

this makes 12 muffins.  coat your muffin pans well with a spray oil, or use liners.
pour the mix in, fill almost to the top, don't be afraid!

bake at 400 degrees for 18 minutes.
